Red Velvet Waffles with Cream Cheese Topping

Who doesn’t love waffles? Who doesn’t love red velvet? Unfortunately they can both be considered foods to stay farrrrrrr away from when living a healthy lifestyle.

I was able to recreate a cleaner and more waist friendly version, check it out!

  

 
1 cup of whole wheat flour (pastry flour if you can find it, but regular is fine)

2 tbsp of baking powder

1/3 cup of unsweetened natural cocoa powder

1 cup of vanilla almond milk

1/2 cup (or serving size container) of Greek vanilla yogurt

1 teaspoon of pure vanilla extract

2 tbsp of extra virgin olive oil

3 tbsp of organic honey

2 eggs

For color: (don’t be scared you can’t taste it! Lol) 4 tbsp of beet juice 

Cream cheese topping:

1/2 cup of reduced fat cream cheese, softened

1/2 cup of vanilla Greek yogurt

1 teaspoon of organic honey

Splash of pure vanilla extract
Preheat waffle iron.
In a bowl combine all dry ingredients. Add egg, milk, yogurt, evoo, honey, and vanilla extract. Whisk or blend together until smooth. Add beet juice and stir in until batter is slightly red. 

Pour batter into waffle iron sprayed with nonstick spray. Remove once done.
For topping:

Combine all ingredients and stir together until smooth. Hand mixer works better if you have one.

*Additional toppings: dark chocolate chips, walnuts, pecans, dried cranberries, strawberries. These can also be stirred into batter.*
