Sweet Potato Turkey Skillet

Meal prep can be quite the daunting task. Over the years, I have learned how to minimize my time in the kitchen as much as possible. One of my favorite ways to reduce my time spent slaving over hot pots and pans is… an all-inclusive meal!

This sweet potato turkey skillet contains it all: veggies, complex carbs, low-fat protein, and tons of flavor. Try it!

Sweet Potato Turkey Skillet

Ingredients:

1 lb ground turkey (or ground chicken)
1 large sweet potato diced in chunks
1/2 cup diced red onions
1/2 cup diced bell peppers
2 large handfuls of spinach (chopped down)
Sea salt to taste
Ground black pepper to taste
1 tbsp of organic honey
2 tbsp of Sriracha sauce
Dash of cayenne pepper
Dash of garlic powder
1/2 cup of low-fat shredded cheese

Preheat oven to 450 degrees.

Place sweet potato chunks on cookie sheet. Drizzle with extra virgin olive oil and place in oven. Roast until tender, about 45 minutes. Set aside.

In a large pan/skillet over medium high heat, sautée onions and peppers with a dash of garlic powder in evoo (do not exceed a tbsp) until tender. Set aside. Do not clean pan just yet.

Season ground meat with salt, pepper, garlic powder, and cayenne pepper. Cook meat in the pan previously used to sauté veggies until juices run clear. Add spinach and fold in. Add sweet potatoes and sautéed veggies next. Fold in. In a small bowl, whisk Sriracha and honey together and then pour over top of the meat mixture.

Turn heat down on pan. Allow to simmer for about 3 minutes. Sprinkle cheese on top and allow to melt. Serve!
