MEAL PREP AND WORKOUTS FOR THE WEEK
For this week’s meal prep, I decided to include a meatless option. Spaghetti squash is always a quick and easy meal to prepare; and the possibilities of how to serve this veggie are endless. But before I get into the details, guess what? I discovered a new way to prep the squash:
As much as I love spaghetti squash, I’m not a fan of the amount of seeds that are in it, soooo frustrating! This is how to cook without the frustration:
STEP 1: Scrub the outside of squash with hot water and vinegar, since you will bake with the skin on.
STEP 2: Cut squash into discs.
STEP 3: Using knife, remove pulp and seeds from the middle of each piece.
Step 4: Place squash on cookie sheet, sprinkle with sea salt, pepper, garlic powder, and a drizzle of extra virgin olive oil. Bake for 30 minutes on 400 degrees, or until tender. It should easily shred with a fork.
I sautéed peppers, spinach and kale in extra virgin olive oil and quickly simmered in reduced sodium chicken stock. Added cooked squash and added grated Parmesan and balsamic glaze. Mmmmm mmmmm! Lol
I also made baked honey BBQ (just 2 tablespoons of sauce) jerk chicken wings with the skin removed.Ummm, speaking of that.. Why don’t they sell skinless wings? It’s very tedious but completely worth it, since there’s a lot of fat in the skin.
Since I was in an “islandy” (just made that word up) mood, I decided to make plantains. I sautéed the plantains in virgin coconut oil.
I accompanied my chicken and plantains with a baby kale and spinach salad. I discovered this DELICIOUS new yogurt based dressing today: Bolthouse Farms Mango Chipotle dressing. I’ve tried other flavors, but this one is my favorite thus far!
Breakfast is my usual: JUICE! I made two, since it cuts down on prep time during my already hectic week.
AM snack: Greek yogurt.
PM snack: pineapple slices and grapes.
Gallon of water throughout the day. Drink up, it’s important to your weight loss!
Workouts are the same from last week, it was highly effective. I lost 3 lbs last week, yaaaassssss bish!
