MEAL PREP AND WORKOUTS FOR THE WEEK.
This week’s meal prep included a few new dishes that I’ve never prepared before. It is VERY important to me to switch it up in the kitchen, boredom with food leads to terrible results for me.
For breakfast, I am having smoothies and overnight oats , each of which will be made the evening before to ensure freshness. He will be having oatmeal and making a few healthy choices of his own.
I made baked cod in a honey ginger marinade and topped with lump crabmeat. This was accompanied with quinoa and spinach and roasted asparagus.
I made a spaghetti squash dish with crabmeat and shrimp, recipe will be posted tomorrow. It turned out delicious!
For dinner, I made a pan of baked chicken with onions and peppers. This will be eaten about 3 different ways.
The clearance still hasn’t been given to return to the gym, and I’m soooooo sad!! Just patiently, well impatiently waiting to return.
