Holiday Stuffed French Toast

Unless you live under a rock, you are well aware that the holiday season is here. A great time to be with family and friends, but a FRIGHTENING time for those of us that are battling the bulge. Fighting temptation against cookies and shit is hard!!


Well, if you’re reading this.. You’re in luck! I have a great recipe for a holiday-themed French toast that is low in calories and high in taste. Like to hear it? Hear it goes:

Holiday Stuffed French Toast

What you will need:

2 pieces of multigrain bread
1/2 cup of soy egg nog
1 teaspoon of nutmeg
1 teaspoon of vanilla extract
1 egg
1 1/2 teaspoons of cinnamon

For filling:

1/4 cup of low-fat cream cheese
1/4 cup of Greek vanilla yogurt
Splash of vanilla extract
Dash of cinnamon


In a mixing bowl, combine egg, egg nog, spices and vanilla extract. Whisk together until blended. Set in refrigerator until you are ready to dip bread.


In a separate bowl, blend cream cheese, yogurt, vanilla extract, and cinnamon using a handheld mixer until smooth.


Spread cream cheese mixture evenly onto two slices of bread and form a sandwich. Dip sandwich into egg nog mixture and place in a pan. Pan should be coated with non-stick coconut oil or olive oil spray, and should be over medium-high heat.


Let cook until golden brown on each side, should be slightly crisp. Remove from pan, cut down the middle, and serve with a drizzle of organic honey.
