Hassleback Sticky Sweet Potatoes

Meal prep can become quite redundant at times, because of that I love finding different ways to prep foods that I eat weekly.

Sweet potatoes are definitely a staple in my weekly meal prep, they are delicious, naturally sweet, and good for you. I was at a steakhouse about a year ago, and my baked white potato was presented in a way that I had never seen. There were thin diagonal cuts across the entire potato, and it was delicious. 

Of course, this potato was also smothered in butter, sour cream, salt… Pretty much everything that I don’t indulge in regularly. So I decided to try a healthier sweet potato version. Here goes:


2-4 cleaned sweet potatoes (pat dry)

1 tbsp of extra virgin olive oil (per 2 potatoes)

Dash of pumpkin pie spice

Dash of cinnamon

1/4 cup of crushed pecans

Agave nectar

Dash of pink Himalayan sea salt



Preheat oven at 425. Wash sweet potatoes and pat dry. Make thin deep slices across the entire length of the potato, making sure not to completely puncture.

Place sliced sweet potatoes on a foil lined cookie sheet. Drizzle and rub evoo on each potato. Sprinkle cinnamon and pumpkin pie spice on each potato. Top with crushed pecans. Drizzle agave nectar on each potato. Finish with a sprinkle of pink Himalayan sea salt.

Bake for 45 minutes, outside should be crispy, and inside should be bubbly and super tender.
